Kids and their veggies

So tonight I decided to try something a little different and discovered this recipe online for how to make pizza’s using eggplant. When I took Pete Cohen’s nutritional profile, it stated that Eggplant should be part of my diet. So much so that it was number 1 on my Top 20 Superfoods! And you know what? I’ve never made eggplant. I’m not implementing the nutritional program yet as I am going to take the weekend to really digest all of the information in it but decided to make eggplant.

As an added bonus, this recipe is TOTALLY kid friendly and you can get help making dinner.

I didn’t love any of the recipes I found, so I made my own:

Ingredients
1 eggplant
2 tbs olive oil
4 oz tomato sauce
1/3 lb Canadian bacon
1/2 cup mushrooms
1 cup shredded cheese
1/2 cup Parmesan cheese
1 salt
1 pepper
1 Italian seasoning

Directions

1. Pre-heat over to 350 degrees

2. slice eggplant into roughly 1/2 inch slices trying to keep them uniform

3. drizzle with olive oil and place on a baking sheet

4. sprinkle with sea salt and put in over for roughly 30 minutes

5. remove from the oven and spoon tomato sauce over the rounds – I added some Italian seasoning over the tomato sauce here

6. add toppings – finishing with cheeses

7. turn oven to broiler and put the “pizzas” back in until the cheese is melted and slightly browned.

8. Our pizzas had Canadian bacon, mushrooms and cheese but your options are limitless!

Another Reason I want to be the next Mamavation Mom

So, I was driving to work this morning and a thought hit me… I was thinking about my amazing family and just how powerful it is that I am their role model… I’m the one that my boys look to when they are learning how to live life.  I never thought about it until I saw Rachel’s (@Rachel_L) original Mamavation Application Video (and OMG have you heard her sing?!)

Then I started thinking about other ways that I’ve tried to be a good example for them and that’s when it hit me. A little background first –

6 years ago, I went through a divorce.  It’s not something that I thought I would ever have to go through – I mean when we play dress up as little girls, it’s always about “happily ever after” and not “till it doesn’t work anymore.”  It was a rough time and truly the hardest thing I’ve ever had to go through and perhaps that is a post for a later date, but just know that I made it.  I survived – but really I did more than that – I THRIVED!

So I thought about the reasons behind going through such a difficult time and what made it worthwhile.  Obviously there were many, many, many reasons leading up to this but ultimately, the one that overshadowed them all was that I refused to teach my children that living in a loveless, selfish relationship is ok.  I wanted to show them what a loving, nurturing, partnership looked like and the environment we were in was nothing like that. I wanted to show them that when you have respect for yourself, you will stand up for what you believe and make a difference and in the toxicity that I was surrounded by, that wasn’t happening. I wanted to set a better example for my kids about what is and is not acceptable and then the epiphany – are you ready………………?

I NEED A DIVORCE FROM MY RELATIONSHIP WITH FOOD!

Sounds crazy but it’s very similar to the other toxic relationship I was in.  And like before, I need a support system to keep going when quitting seems easier. My goal is to teach my kids that you can have a healthy relationship with food. I want to show them how to eat to live instead of how to live to eat.

I want to be the next Mamavation mom

So here it is – I want to be the next Mamavational Mom.  No excuses.  No turning back.  No more waiting.  I want to am going to live a healthy life and I want to am going to teach my kids that they aren’t victims… oh heck, it’s all in the video

**disclaimer… sorry the quality is a little rough – battery was dead on the video camera and I couldn’t find the charger…and I haven’t figured out how to make my microphone work on my headset, so I used my phone… You gotta LOVE technology!**
